Short answer
Resetting app data removes all app data stored on this device, including orders created on this device.
This action does not delete your account or data stored on other devices.

What this action does
When you tap Reset app data, the app removes all data stored locally on this device.
This action:
Removes all app data stored on this device
Deletes orders created on this device
Resets the app to a clean state
Same actions are performed when deleting the account
All actions performed by Reset app data are also performed when you choose Settings → Data → Delete account. In addition, Delete account removes your email login.
Use Reset app data if you want to clear local data without removing your email login.
What this action does NOT do
Resetting app data does not:
Delete your account
Delete your login permanently
Delete orders stored on other devices
If you sign in again, your account data may appear again.
When you might use this option
You may want to reset app data if:
The app is not working correctly
You want to remove all data from the device
You want to start using the app from a clean state

Make sure you have saved any photos or videos you want to keep.
Orders created without login are stored only on this device and will be permanently removed.
